Zucchini Bread by my Mom

Ingredients; 4 eggs 1c. vegetable oil 2c. sugar 2 tsp. vanilla extract 2 1/2 c. shredded zucchini (mom uses a food processor to make it finer) 3 1/2 c. all purpose flour 1 1/2 tsp. baking soda 3/4 tsp. baking powder 1 1/2 tsp. salt 1 1/2 tsp. cinnamon Nuts optional *Sometimes mom will use allspice instead of cinnamon. This is also good. Combine all ingredients. Pour into 2 greased loaf pans. Bake at 350 degrees Farenheit for 1 hour, or until knife comes out clean.
